How long does meal prep last in the fridge and freezer?
The short answer: 3 to 4 days in the fridge, and safe indefinitely in the freezer, where quality is best within a few months. The details below decide whether Thursday’s lunch is still good.
In the fridge: 3 to 4 days
The USDA advises eating cooked leftovers within 3 to 4 days, kept at 4 °C (40 °F) or below. That covers most batch-cooked meals: cooked meat and fish, stews, casseroles, rice, pasta and roast vegetables.
If you cook on Sunday, that takes you safely to Wednesday or Thursday. Meals for the rest of the week belong in the freezer from day one, not after they have sat in the fridge for three days.
In the freezer: safe for good, best within months
Food kept at −18 °C (0 °F) stays safe indefinitely, because bacteria cannot grow. What changes is quality: flavour and texture fade over time. FoodSafety.gov suggests 2 to 3 months for soups, stews and casseroles, and 2 to 6 months for cooked meat.
Cool it quickly
- Refrigerate cooked food within 2 hours, or within 1 hour when the kitchen is above 32 °C (90 °F).
- Split big pots into shallow containers so the centre cools fast. A large pot of stew can stay warm for hours.
- It is fine to put warm food in the fridge. Leave a little space around the containers so cold air can circulate.
Thaw and reheat safely
- Thaw in the fridge overnight, in cold water, or in the microwave. Not on the counter.
- Reheat until piping hot all the way through: 74 °C (165 °F) in the centre. Stir halfway through in the microwave.
- Food thawed in the fridge can go back into the freezer, though it may lose some quality.
What freezes well, and what doesn’t
Freeze well: stews, curries, chilli, bolognese and other sauces, shepherd’s pie, lasagna, cooked rice and grains, muffins and quick breads, cooked chicken and beef.
Freeze badly: salad leaves, cucumber and other raw watery vegetables, mayonnaise, hard-boiled egg whites (they turn rubbery), and anything fried, which goes soggy. Cream sauces can separate and potatoes in soups can turn grainy. Add these fresh on the day.
Label everything
Write what it is, who it is for and the date on every box. It saves guessing, and it makes it obvious which meals to eat first.
How Batchillo plans around this
You set how many days food keeps in your fridge. Batchillo plans the week so meals beyond that go to the freezer, tells you which recipes freeze well, and labels every box with the person and the day it is for.
